We are OPEN
August and September was just one huge BLUR. After weeks of waiting we received our final ATC permit at the end of September. It was crazy to think that after two years of hard work, we were finally legal to begin brewing!
As soon as we got our permitting, we brewed 3 beers in 3 days. We made a light golden ale, a classic Bavarian-style Hefeweizen and a Belgian-style dubbel with New Iberia honey added. We decided to make these beers first because we really wanted to test our new Craft Kettle system and get the math right.
Although we had 3 beers brewed, they still take at least 3 weeks to ferment so we called in the calvary to get the taproom put together. Both of our families came through to really help transform the space into what it is now.
We finally opened on October 13th and we were blown away by the turnout! We were only able to open with 3 beers on tap, but we have much, much more in the works!
